JD’s World Famous Green Chile Sauce

Ingredients:

  • 1 lb. Boneless Pork Chops (cut into small chunks)
  • 1 large onion, chopped
  • 1/4 cup bacon drippings
  • 2 lbs. green chile, roasted, peeled and chopped (One large can of Embassa green chilies)
  • 2 cloves garlic, crushed
  • 1 tsp. cumin (maybe more – put in to taste)
  • 1 tsp. salt
  • 1-1/2 quarts water

Brown pork in bacon drippings; thicken with flour, add onion, garlic, green chile, cumin, salt and water. Bring to a boil, stirring constantly. Lower heat to simmer 15 – 30 minutes. Pour into a crock pot and slow cook for 3 to 4 hours if on low (this is a pretty forgiving dish).

We use this sauce on fajitas and burritos.
