Jim Davidson Shares Delicious Black Beans Recipe

I got this recipe from my dear friend, Candy Gil, for those of you who want to taste the real thing! I don’t think you will ever have better black beans. Try with fried green plantains and some roasted pork…unbelievable!

  • 7 Cups of water
  • 1 Pound dried black beans
  • 1 Medium onion, chopped
  • 2 Garlic cloves
  • ½ Green pepper, sliced
  • 3 Teaspoons of salt
  • 4 Tablespoons olive oil
  • ¼ Teaspoon oregano
  • ¼ Teaspoon sugar
  • 2 Bay leaf
  • 1 Cap of white vinegar
  • Pepper to taste

Cook dried bean in pressure cooker for approximately 15 minutes after it starts to chime.

Saute onions, pepper and garlic in 4 tablespoons of olive oil.  Add to beans and continue simmering at low heat.  Add the rest of the ingredients and simmer for about an hour.  At this point you can add more salt or pepper.  The beans should have a thick consistency.
