JD’s World Famous Green Chile Sauce

Ingredients:

  • 1 lb. Boneless Pork Chops (cut into small chunks)
  • 1 large onion, chopped
  • 1/4 cup bacon drippings
  • 2 lbs. green chile, roasted, peeled and chopped (One large can of Embassa green chilies)

JD’s Stuffed Salmon Steaks Encrusted in Phyllo Pastry Strips on Lobster Bisque

I created this dish after having something similar at Giovanni’s many years ago.

Ingredients:

  • Salmon Steaks – 3” to 4” wide, deboned and skinned
  • Garlic Goat Cheese
  • Fresh Spinach
  • Olive Oil
  • Phyllo Pastry – thawed and cut in 2” strips

JD’s Brunswick Stew Recipe is Perfect for Winter!

This recipe is courtesy of my double-first cousin, Ed Davidson. I just made it this weekend and it’s delicious!

Ingredients:

  • 1 quarter lb. salted butter
  • 1 large finely diced sweet onion
  • 1 teaspoon cayenne pepper
  • 1 tablespoon salt
  • ¼ cup Worcestershire sauce
